Vodka Cured Salmon with Citrus
This recipe marries two of my favourite ingredients; raw salmon and vodka! I found it in a Scandinavian cookbook that my mother owns and was immediately intrigued. It has since become one of my favourite light and healthy appetizers, naturally receiving a tweak or two.
Recipe: (serves 4)

thin slices of raw salmon
shallots, very finely chopped
chives, chopped
vodka
juice of ripe blood orange
juice of lime
sea salt
black pepper
rocket, for garnish

- Lay out the salmon slices on plates - 4 per plate. Sprinkle each plate with the shallots and chives.
- Mix the vodka and orange juice. Pour over each plate equally, covering the salmon. Let stand.
- Just before serving, sprinkle lightly with salt and freshly ground pepper then drizzle over the lime juice.
- Garnish with baby rocket (arugula) leaves. Serve immediately.
