Vodka Cured Salmon with Citrus

This recipe marries two of my favourite ingredients; raw salmon and vodka! I found it in a Scandinavian cookbook that my mother owns and was immediately intrigued. It has since become one of my favourite light and healthy appetizers, naturally receiving a tweak or two.

Recipe: (serves 4)

thin slices of raw salmon
shallots, very finely chopped chives, chopped
vodka
juice of ripe blood orange
juice of lime
sea salt
black pepper
rocket, for garnish
  1. Lay out the salmon slices on plates - 4 per plate. Sprinkle each plate with the shallots and chives.
  2. Mix the vodka and orange juice. Pour over each plate equally, covering the salmon. Let stand.
  3. Just before serving, sprinkle lightly with salt and freshly ground pepper then drizzle over the lime juice.
  4. Garnish with baby rocket (arugula) leaves. Serve immediately.
